Built for souvla, not adapted for it

Most charcoal barbecues in the UK are designed around a grill grate. A souvla is a different job: a long skewer, turning slowly, low over embers, for two or three hours. Bolt a rotisserie kit onto a kettle barbecue and you get a motor fighting a lid it was never meant to carry. The Rozza is built the other way round — the spit is the point, and the charcoal bed runs the full 860 mm length of the machine underneath it.

Two sheet steel skewers with oak handles come in the box, long enough for a proper souvla of layered pork, chicken thigh or lamb.

Halloumi, peppers, mushrooms and flatbread all cook on the same coals while the souvla turns. The grill bed is not blocked by the spit.

  1. Load the skewer

    Layer the meat along the skewer and lock it between the oak-handled forks.

  2. Light the charcoal

    A charcoal bed under the full length of the spit — no gas, no briquette trays.

  3. Set the height

    Drop the spit low to seal, raise it as the coals settle. Heat is controlled by distance, not guesswork.

  4. Let it turn

    The motor rotates continuously, so the meat bastes in its own fat instead of drying on one side.

Is this a real souvla machine or a rotisserie with a Greek name on it?

It is a charcoal spit roaster built around a long skewer and a continuous motor, which is what a souvla or foukou needs. It is made in the UK rather than in Cyprus, and it is not a copy of a traditional foukou – the charcoal tray, the adjustable height and the sheet steel skewers are its own design.

How long a souvla will it take?

The machine is 860 mm long overall, and the two skewers supplied run its full cooking width. That is sized for a family souvla – layered pork or chicken, a shoulder of lamb, a porchetta – rather than for a whole lamb.

Can I cook Cypriot foukou-style over the same coals?
